Karol Okrasa, the polish star chef, is considered as the most talented chef among coeval chefs. He is currently executive chef of in Hotel Intercontinental Warsaw. His restaurant was chosen as 『Michelin Guide 2019』 ‘The Plate’ as well as 『100 Best Restaurants Contest』 ‘The Best Hotel Restaurant’. He is famous for not only his culinary skills but confectionary. He was appointed judge in World Chocolate Masters competition, and let the public know his cuisine by appearing on TV shows. He is also known as travel-lover. He never minds spreading Polish culture and cuisine during his travel. This is the reason why he could be awarded ‘BENE MERITO’ medal by Secretary of State of Poland on account of his contribution for spreading Polish culture and cuisine.

How did you feel about joining JFWF 2019?

It was a valuable experience. We found the tradition of Jeju, and we were able to exchange inspiration with other chefs. I will always remember the stories of haenyeo and visit the main museum. It was a great honor for me to be part of this cultural festival. Thank you for your hospitality.

What is the most important factor in cooking?

Passion and responsibility! It will make people happy and give them special moments. When cooking with passion, we can express ourselves, express culture.

Any advice for those who dream of a chef?

Develop yourself steadily. Not every chef is a chef, but every chef must be a good expert. Also, find an inspiring teacher and learn the history of the station where you live. A better understanding of culture and customs will be a great help in cooking.
